How can you get fat from eating fish, which is supposed to be one of the healthiest foods around? If it’s FRIED. Eating a Southern staple, fried fish, could be one reason people in Alabama and across the "stroke belt" states are more likely than other Americans to die of a stroke. In the stroke belt states–Alabama, Arkansas, Georgia, Louisiana, Mississippi, North Carolina, South Carolina and Tennessee–the risk of dying from stroke is higher than in other parts of the country. In Alabama, the stroke death rate is 125 per every 100,000 people, against a national average of just 98 per 100,000. Studies have shown that the omega-3 fatty acids in fish, especially fatty fish, may reduce the risk of stroke, but other research has shown that frying fish leads to the loss of the natural fatty acids. So when you eat fish, broil it, grill it or bake it, but DON’T fry it!

There may not be many fish in our future, anyway: Of the 675 fish species found in southeastern waters, more than 25% are considered imperiled. Of all animal species on the Federal endangered and threatened species list, 46% are found in freshwater habitats. The highest number of species at risk occurs in the southeastern United States. Will fishing in that area become a thing of the past and will fish store shelves be empty? Wildlife expert Donald J. Orth says, "The southeastern United States is one of the fastest growing regions in the country, and the human population continues to expand at a rapid pace. In some states, the population has more than doubled in the past 50 years." He sees this growth as posing a danger to local fish populations "as demands grow to impound streams, divert stream flow, and pump groundwater."
